Strawberry Spinach Salad & Meal Plan

Yea it is May bring on the strawberries.  Is my favorite time of year for great seasonal fruits and vegetables.  This week I am planning to eat Strawberry Spinach Salad  with Mangos Homemade Lemon Dressing for lunch.  The salad a great for  dinner add chicken breast.

Strawberry Mango Spinach Salad

  • Spinach 4 cups
  • 1 pint of strawberry clean and sliced
  • 1 mango
  • Lemon Mustard dressing

Lemon Mustard Seed Dressing:

  • 1 juice of Lemon
  • 1/4 cup of apple vinegar
  • 1/2 cup of  vegetable oil
  • 1/8 water
  • 1 tablespoon of Dijon  mustard
  • 1 tablespoon of honey
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Make dressing separate and toss in salad before you serve

Friday: Roasted chicken, Roasted cauliflower, Zucchini, yellow squash and mushrooms, baked potato

Mango Berry Spring Rolls and Meal Planning

mango berry spring rollsMango Berry Spring rolls Great Low calorie dessert great for diabetic and reduced calorie.  I love the season of Spring because strawberries become a local season fruit. There is noting like a strawberry raw, cooked or any way to get me in a spring mood.  Then you add possible my favorite fruit Mangoes.. let just say mangoes are great on almost anything  from fish, salsa , chocolate .. the list goes on on.   Then I discovered at the grocery store a cactus fruit,  hum never tried them.  They are a fruit with lets say a spikey attitude.

Cactus Fruit Or Prickly Pear have the consistence of a watermelon seeds and all.  The flavor is mild,  but there are seed you eat.  The skin on the other hand .. it is a cactus .. so the spikes do get in your fingers, and they are fine so you can see, but feel them ouch!.   They look pretty when cut the pear open. You handle them covering your fingers  with a paper towel and you and peel them like you would a Kiwi.  (you can also omit the Cactus Pear if you don’t want to deal with them)

Mango Berry Spring rolls

Great Low calorie dessert great for diabetic and reduced calorie.

Makes 6-8

Prep 10min

Cook 8min

Calories under 150 for 1 ingredants for berry spring rolls

  • 1 mango- cut into small chunks
  •  1 pint of strawberries cut in to small bites
  •   1 Prickly Pear aka Cactus Fruit cut to small bites
  •  Sprinkle flour (for thickening)
  • Sprinkle of brown sugar or sugar alternative stevia

  •  Sprinkle of salt to bring out flavors
  •  1 Tbs spoon of honey (or agave liquid for diabetic)
  •  1 package of spring roll wrappers Thawed
  •  Optional Whip cream on side (your choice)
  1. Mix cut fruit,  with sugar, honey, sprinkle flour  and sprinkle of salt to bring out flavors
  2. Lay out spring roll on baking sheet, add fruit on one end, fold sides in then  roll.spring roll how to roll spring roll how to roll spring roll how to roll how to make spring rolls
  3. You can use  honey to seal ends
  4. Bake for 6-8 minutes watch till looking lightly crispycooked spring rolls
