Menu Planing This week is a beautiful weather.  It makes me want to plant and grow veggies. We went to my husbands family farm this weekend. As we drove home we stopped by a plant nursery purchased veggies, a well established beef steak tomato plant.  I also purchased 4 different peppers red, green, yellow, and purple.   The finally veggies is zucchini  which I will really enjoy during the summer,  my kids really like roasted zucchini almost like a chip.

I am really looking forward of becoming one with my food, since I love to cook.  I have great plans to do it every year, then vacation happens and they all die.  So this year we are not going away so I am hopping I can keep my crop going.  On Pinterest I have found some great ideas for simple irrigation methods.  Also I have been reading about dirty and how to have great healthy rich soil.  The concept of growing your own veggies seems like a great idea.. but it also seems like it can be expensive,  if you don’t figure out some great DIY methods.  Check out on my pin board some great ideas.

Mac and Cheese Fried Onions and Bacon Toppers

mac and cheeseMac and Cheese Toppers : I love mac and cheese and put something special on top. Yummy My husband got a night with out the kids so I made a special dinner with a treat of individual Mac and Cheese sides.  I love this I made it in about 30 minutes and it was an easy side.  That was portion controlled and yummy

Homemade Mac and Cheese with Onion toppers

Makes 4

  • 1/2 lb of pasta (precooked and drained)
  • 1 cup of milk
  • 8oz  block of Velveeta cheese  or your favorite cheese
  • 3 tablespoon butter
  • 3 tablespoon of flour
  • salt pepper
  • Hormel Apple-wood Bacon Bits
  • Frenches Fried Onions
  • Shredded cheese
  1. Make your rue add the butter and flour to bottom of pot creating an equal amount of both keep moving till it becomes a paste and move till it get dark nutty color.
  2. Add slight warm milk, no ice cold, stir into the rue slowly allowing the sauce to thicken
  3. Add the Velveeta of your favorite cheese still till smooth
  4. Add noodles and mix cheese
  5. Put mac and cheese in ramekins
  6. Top with onions bacon and cheese cook for 15-20 minutes 375.

The Best Venison Marinade

venison steaksThe best venison marinade :  I grew up in a family where venison(deer meat) was a regular staple.  My father was a amazing hunter and cook.   So venison in all forms had a regular place a our table.  From Roast to chilli to steaks.   In college my roommates and I lived on a steady stream of deer meat that my father would provide us,  it was meat we could always afford because it was well free.   My son actually gets excited when Pa provides Venison

For my entire life I never understood why people tell me they don’t like the taste of deer meat.  It is  a lean cut of meat deer do not have the fat of a cow.   From what I have been told that deer can be tough if not cooks properly.  After watching my father for years I have learned his trick for making the  best venison marinade  you will ever make and eat. This simple venison steak recipes and time will make the most tender venison steaks you will every bite amazing.

The best venison marinade:

  • 2 lb of Venison steaks
  • 1 cup of Orange Juice
  • 1/4 cup Soy Sauce
  • 1 tablespoon of minced garlic
  1. Put ingredients in a gallon zip lock bag.
  2. Marinade for 24 hours – or overnight
  3. Gook on grill or frying pan , med rare
  4. Discard marinade
  5. let the steaks rest 5-10 min prior to eating

Ninja Cooker Recipe Ham and Meal Planning

Ninja cooker disclosure affiliateNinja Cooker Recipe: Ham an easy recipe that fits my family’s dietary restrictions and a summary of how is it going with my family changing our diet. Our changed include making  family friendly Gluten, red meat, dairy, and night shade vegetable free.   Our Food Progress: I am doing better at making meals that please all of us in cluding my husband with his restricted diet.   Last week it was better,   I am asking my husband to help with cooking more because of my schedule and his dietary need.

My Ninja Cooker a Year Later: It has been a year since I 1st review my Ninja Cooker.  I really must say this in one appliance that has never left my counter.  I use it at least once a week,  it make life easy and is a great size for my family of 4 (note one is a teenage boy, and both my kids are competitive swimmers.)   I really do recommend it often to friends and family.  So if you are looking for a new crock pot but want more function them just a crock pot.  Look in to a Ninja cooker.

Sunday night was a case in point where I need an easy meal,  my daughter had a concert at church at 4pm.   I quickly came home after dropping her off at 2 for rehersals  and put dinner in the Ninja cooker and used the timer on the stove for my sides.  I made a smoked ham that was not not overly salty.  My husband did eat ham so I was happy,  because I wanted him to enjoy the Sunday night meal as well.  Why did I choose the Ninja instead of putting the ham in the oven. Was because I want the ham to cook longer and not dry out. So with the side cooking an hour the oven would shut off and the Ninja would cook the ham for the full 3-4 hours until we returned.

Ninja Cooker Recipe : Crock pot ham

  • Bone in ham 7-14 lb (I used a 8lb to feed my family of 4 with enough left over for soup)
  • 1 can crushed Pineapple
  • 1 cup from brown sugar
  • 1 can of coke or soda full sugar
  1. Trim the fat , Score the ham or ham skin in a crisscross pattern
  2. Place ham in your Ninja Cooker I took a bone in ham placing the largest size down  so the bone was
  3. Rub ,packing,pushing brown sugar in score
  4. Pour the can of pineapple
  5. Cook on high for 3-4 hours in a Ninja cooker on crock pot setting using
  • Side Spaghetti Squash sliced 1/2 clean out seeds and place face done in glass dish add 2-3 water cover with tin foil and bake in over for 400 degress for 1 hour
  • Side baked sweet potato  1 hour 400 degrees 1 hour

Monday: Split Pea soup (soup bone from ham)

Tuesday:Chicken: Chicken Pot Pie-  Making a gluten Free crust with rice flour

Wednesday : Ash Wednesday I am make Easy Seafood chowder at church and Fresh Bread in a Bag 10 loaves

Easy Seafood Chowder and Meal Planning

easy_seafood_chowder_013_001-1-2Easy Seafood Chowder  creamy seafood soup is my favorite soup.  You know what I love about cooking.  Is the discover of recipes that are passed from person to person.  Some times the recipe is written down some times it is this is so easy. This sea food chowder recipe I discovered when my sister made it for several parties.  I loved it,  she said it was her veterinarian mother in laws recipe and it is so easy.   I have discover over the years that he mother in law despite of being a vegan can really cook meats.

So before my pumpkin carving part I texted my sister and she told me the ingredients.. I did a few changes my self and served the soup it was a hit at my party.  Everyone loved it and asked for the recipe.  So I am going to share with you:

Tip buy the ingredients when on sale in the store –  this is a quick soup

Easy Seafood Chowder:

Makes 8-10 cups

Cook time 30-40 minutes stove top or 2-3 hours crock pot

  • 1 onion diced
  • 3-4 carrots diced
  • 2 stalks of celery
  • 1 brick of cream cheese softened
  • 6 cups of milk (more or less depending on soup thickness prefer ed)
  • 3 potatoes peeled and diced
  • 1 can of corn w/ juice 15.25 oz
  • 1 can Cream of Mushroom Soup, 10.75 oz
  • 1 can of can crab 6.5  oz(you can buy the expensive lumped meat or the simple can on the shelf= your choice)
  • 1 can of clams  4.5 oz(chopped or whole –  then chop the whole again size depends on amount of clams- 10-13 oz can)
  • 1 bag of frozen shrimp  uncooked 12oz or 16 oz  (tails on or off – remove tails prior to cooking-  size your choice based on expense you might want to cut if large)
  • 1 bag of scallops optional
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Hot sauce to taste
  • Optional Garnish Bacon or green onions

 

How to make Seafood Chowder:

  1. In a large pan saute, onions, carrots and celery  making a Mirepoix (time saving tip use frozen mirepoix )
  2. Transfer your Mirepoix to a crock pot or large soup pot
  3. Add brick of cream cheese allow to melt (or melt in microwave for 30-1 minute till smooth) don’t burn
  4. Then dump mushroom soup, corn w/ juice, potatoes, milk in pot
  5. Add salt, cayenne pepper, pepper and hot sauce
  6. Cook till potatoes are soft (20 minutes on stove) (crock pot 2-3 hours)
  7. Then add sea food clams, crap, shrimp (tails removed and cut to bite size)
  8. Allow seafood to warm and serve.  Try it with a crusty bread
  9. Quick Crock pot you can do everything on stove and keep warm in a crock pot for a party.

Simple Easy Egg Burrito : Meal Planning September 23

Meal Planning and  Simple Easy Egg Burrito

My son is headed back to school today ! So it is a lovely day.  This is my easy morning omelet wrap.  I love this because I get the taste I want with little mess. One pan clean up and i makes me feel like a splurge.

Easy Egg Burrito or Breakfast  Wrap

Ingredients:

  • 3 egg (toss 2 yokes) to make 3 whites, 1 yoke
  • 1 slice of cheese
  • hot sauce
  • 2 slices of lunch ham
  • 10″ tortilla
  • non stick cooking spray  or butter

 

  1. In a pan spray with non stick spray heat medium heat
  2. Put eggs in (1 yoke 3 whites ), add hot sauce if you want (I save the other yokes for the dogs)
  3. cover to spread up the cooking processegg cooking steps
  4. Uncover add the ham
  5. Then add the cheese
  6. Place tortilla right on top of the egg/ham/cheese
  7. Cover allow the steam to soften up the tortilla
  8. Carefully flip the egg tortilla on a platetortilla on pan and plate

Fennel Recipe and Menu Plan Monday June 17

fennelSo I have been looking at Fennel for a long time avoiding it because I was told it taste like anise and I hate hate hate Black Liquorish (which is an anise flavor)  So on my quest to try new things I walked into Traders Joes and tried it.  So did my daughter. We both liked it, it did not taste like liquorish .  So I bought it.  The nice lady behind the counter gave me a a recipe sheet.fennel

Easy Fennel Recipe

  • 2 fennel
  • garlic minced
  • 2 tbl of olive oil
  • salt
  1. chop the fennel into bite size pieces
  2. add garlic oil and salt, mix.
  3. Microwaved covered for 5-7 minutes till tender  enjoy.  makes 6-7 servings.

Monday: Easy pasta dish,  with sausage

Tuesday: chicken thighs cooked with peaches on the grill

Wednesday: Black bean soup with white

Pea Salad Weekly Planning and Tweet to win!

So when I was living in Florida I met Wendy Henderickson.   She was such a fun person she was from Tenn,  we met though our love of Dogs .  She trained he pit bull to be a therapy dog, I had my doberman that was a therapy dog.  So because were Northern ex pats and had no family south,  we would spend alot of holidays together.   Wendy would always make her husbands favorite pea salad,  it was his moms recipe.   I loved it every time she did.  Now that I retreated back up north.  The Hendrickerson Pea Salad is a staple in my summer party recipe repertoire.

  • ·         1 package of frozen sweet peas
  • ·         2 cup package of shredded cheddar cheese
  • ·         1 Bottle or package of “Real Bacon” (bits)  do not use imitation
  • ·         1 few leaves of romaine lettuce
  • ·         1 cup of mayo
  1. Put the peas in a colander and rinse with cold water to take the chill of them and so they don’t stick together
  2. This is a layer dish
  3. Start with romaine lettuce tear into squares , and lay on bottom of bowl  2-3 quart
  4. Next the peas a layer of them
  5. Coat with a layer of the mayo
  6. Sprinkle some cheese
  7. Then sprinkle bacon
  8. Repeat again starting with the lettuce,  peas, mayo, cheese, bacon (repeat once more)
  9. Finish with garnish of cheese and bacon
  10. Let sit over night or a good couple of hours to chill up again.
  11. Mix an hour before serving ( I actually prefer it made ahead and it is better the second day- Left overs)
  12. It does not look the preeties but super yummy

***** Please make sue you do not leave this salad sitting in the sun since it has mayo!
